Production and aging

  1. The processing, aging and bottling of the wines bearing the Designation of Origin will be always effectuated inside of the wineries registered in the Registry for that purpose.
  2. Local wines which are destined to production or aging cannot contain vibrations, to maintain a constant and cool temperature during the whole year and a suitable humidity level and ventilation.
  3. The starting point of wine aging in barrel cannot be recorded, in no case, before the first day of December, in the year of  the harvest.
    In order to use the following indications for the labeling, the production and aging of tranquil wines taken into consideration has to be as follows:
  • "Crianza": red wines with an aging period of at least 24 months, from which 6 months at least being in oak barrels and having a maximum capacity of 330 liters. Regarding white and rosé wines, the minimum aging period is 18 months, from which six at least will be in oak barrels keeping the same maximum capacity.
  • "Reserva": red wines with an aging period of at least 36 months, from which 12 months at least in oak barrels with a maximum capacity of 330 liters, and in bottle the rest of this period. Regarding white and rosé wines the minimum aging period is 24 months, from which six at least will be in oak barrels keeping the maximum capacity, and in bottle the rest of this period.
  • "Gran Reserva": red wines with an aging period of at least 60 months, from which 18 months at least being in oak barrels having a maximum capacity of 300 liters, and in the bottle the rest of the same period. Regarding white and rosé wines, the minimum aging period is 48 months, from which six at least will be in oak barrels keeping the maximum capacity, and in bottle the rest of this period.
  • "Añejo": red wines, white or rosé having an aging period of 24 months in total with a container made of oak wood, maximum capacity of 600 liters, or in bottle
  • "Roble": wines that remain in a container made of oak wood, maximum capacity of 600 liters, and for a period no longer than 45 days in the case of white wines and 90 days for red wines.
  • "Noble": wines subjected to a minimum aging period of 18 months in total, container made of oak wood and maximum capacity of 600 liters or in bottle.
